Failed Dinner...

Chicken, Potato, & Black Bean Soup
from Family Feasts for $75 a week

I have to say, I've really enjoyed this book and the recipes I've make from it have been thoroughly enjoyed. Until last night. It could possibly be my fault. I somewhat altered the recipe.

The ingredients are:
chicken broth
water
russet potatoes
sweet potato
olive oil
chicken- didn't have a full 2 cups so I did about 1 cup chicken and 1 cup of leftover taco beef I had in the fridge. I believe this is where I went wrong.
onion
celery- did not have
oregano
cumin
cayenne pepper- did not use
dried sage
diced green chilies
black beans

So now I'm left wondering: What am I going to do with all this soup that really wasn't very tasty? Is there some way for me to turn it into something we can eat? Maybe add soy milk and puree it? Maybe add rice and bake it so that it is sort of casserole-esque? I would love to know, what would you do?!

Sweet Kielbasa Skillet

I'll be adding spinach & peppers. Kielbasa is always a family favorite.

**update** This was yummy! The whole family enjoyed it. Hubby said it was maybe a little to vinegary/mustard-y... But he has a sensitive palate ;-)

Blueberry Spinach Smoothie, then Popsicles

Here's what we made this morning:

1 1/2 cup Frozen Trader Joe's Wild Boreal Blueberries
2 cups Costco Organic Spinach
Organic chocolate raspberry syrup
Organic soy milk
1 whole avocado

Blended in Cuisinart. Enjoyed. Leftovers are freezing in Popsicle molds!

I really love that my kids just eat these up. What an awesome get to get them to eat and enjoy the good stuff.
